Instructions
- 1. Preheat the oven to 350°F and prepare a loaf pan with butter or parchment paper.
- 2. In a medium bowl, whisk together flour, baking soda, and salt; set aside.
- 3. In a mixer, cream together the butter and brown sugar until fluffy, about 5 minutes.
- 4. Add eggs one at a time, mixing well after each addition, then mix in vanilla and bananas.
- 5. Gradually add the flour mixture in three batches, mixing until just combined.
- 6. Pour the batter into the prepared pan and smooth the top.
- 7. Bake for about 50-60 minutes, checking for doneness with a toothpick.
- 8. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
