Instructions
- Preheat the oven to 350°F and prepare a 10 x 5-inch loaf pan.
- In a large bowl, whisk together the sugar, flour, baking powder, baking soda, nutmeg, and salt.
- In a medium bowl, mash the bananas and whisk in the eggs until well mixed, then combine with the dry ingredients.
- Add melted butter to the mixture and stir until incorporated without overmixing.
- Transfer the batter to the prepared loaf pan, leaving ¾ inch of space from the top.
- If desired, mix sugar and cinnamon and sprinkle over the top of the batter.
- Bake for 1 hour to 1 hour 10 minutes, until a toothpick inserted in the center comes out clean.
- Let the bread cool in the pan for 15 to 20 minutes before slicing.
