Ingredients

The batter

  • 1 ⅛ cup Cake flour
  • ¾ cup Bread flour
  • 2 tsp Baking powder
  • ½ tsp Cinnamon powder
  • 1 ¼ stick Unsalted butter
  • ¾ cup Caster sugar
  • 2 large Eggs
  • 1 cup Mashed ripe bananas

For decoration

  • 1 small Banana (sliced)

Instructions

  1. Take the butter and eggs out of the fridge to reach room temperature.
  2. Preheat the oven to 356°F (180°C).
  3. Sift the cake flour, bread flour, baking powder, and cinnamon powder together and set aside.
  4. Line the bread form with a baking sheet.
  5. Crack the eggs into a bowl and beat them.
  6. Peel and mash the bananas, measuring one cup for the recipe.
  7. Beat the softened butter in a stand mixer until pale and fluffy, then add the sugar and mix again.
  8. Gradually add the beaten eggs to the butter mixture, mixing well after each addition.
  9. Add the mashed bananas and combine at low speed.
  10. Fold the sifted flour mixture into the batter using a wooden spatula, being careful not to overmix.
  11. Transfer the batter to the lined bread form and flatten the surface.
  12. Decorate the top with sliced banana if desired.
  13. Bake in the oven for 60 minutes, testing with a skewer to ensure it comes out clean.
  14. Remove from the oven, cool on a wire rack, and serve with butter or whipped cream.
