Ingredients

The batter

  • 1 ¾ cups all-purpose flour
  • ¾ cup granulated white sugar
  • 1 teaspoon baking powder
  • ¼ teaspoon baking soda
  • ¼ teaspoon salt
  • 2 large eggs, lightly beaten
  • ½ cup unsalted butter, melted and cooled
  • 3 large ripe bananas, mashed (about 1 pound)
  • 1 teaspoon pure vanilla extract

Garnish

  • to taste walnuts (optional)

Instructions

  1. Preheat the oven to 350°F (176°C) and prepare a loaf pan by buttering and flouring it.
  2. In a large bowl, mix together the flour, sugar, baking powder, baking soda, and salt.
  3. In a separate bowl, combine the mashed bananas, eggs, melted butter, and vanilla extract.
  4. Fold the wet ingredients into the dry ingredients until just combined, being careful not to overmix.
  5. Pour the batter into the prepared loaf pan and add walnuts on top if desired.
  6. Bake for about 60 minutes or until golden brown and a tester comes out clean.
  7. Allow the bread to cool on a wire rack before removing it from the pan.
