Easy Banana Bread

Ingredients

The batter

  • cups mashed bananas (about 4 small ripe bananas)
  • ½ cup light brown sugar or granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • ¼ teaspoon ground cinnamon (optional)
  • ½ cup melted butter or neutral oil (e.g., olive oil)
  • ½ teaspoon kosher salt
  • cups all-purpose flour

Optional add-ins

  • ¾ cup chopped nuts (your choice)
  • ¼ cup seeds (your choice)
  • ½ cup chocolate chips (optional)

Instructions

  1. Preheat the oven to 350°F and grease a loaf pan.
  2. Mash the bananas in a bowl.
  3. Combine the mashed bananas, baking soda, oil (or butter), sugar, vanilla extract, eggs, and salt in a large bowl.
  4. Fold in the flour until just combined, then add nuts, seeds, and chocolate chips if using.
  5. Pour the batter into the prepared loaf pan and smooth the top.
  6. Optionally, add sliced banana on top and sprinkle with seeds.
  7. Bake for 55 to 60 minutes, or until a skewer comes out clean.
  8. Cool in the pan for 10 minutes before transferring to a cooling rack.
