Ingredients

Wet Ingredients

  • 2 tbsp ground flaxseed
  • 6 tbsp water
  • 1 cup very overripe mashed banana
  • ¼ cup coconut oil, melted
  • ¾ cup organic cane sugar
  • 1 tsp vanilla extract
  • 1 cup grated zucchini

Dry Ingredients

  • 1 ¼ cups whole wheat pastry flour
  • cup cocoa powder
  • ½ tsp cinnamon
  • 1 tsp baking soda
  • ½ tsp salt
  • ½ cup chocolate chips

Instructions

  1. Preheat the oven to 350°F and grease a 9x5 inch loaf pan.
  2. Combine ground flaxseed and water in a large mixing bowl and let it thicken for 5 minutes.
  3. Add mashed banana, melted coconut oil, sugar, vanilla extract, and grated zucchini to the bowl and stir to combine.
  4. Mix in the whole wheat pastry flour, cocoa powder, cinnamon, baking soda, and salt until just combined, being careful not to over-mix.
  5. Fold in the chocolate chips and pour the batter into the prepared loaf pan.
  6. Bake for 1 hour and 5 minutes or until a toothpick comes out clean.
  7. Cool for at least 20 minutes on a wire rack before slicing.
