Instructions
- Preheat the oven to 350°F and grease a 9x5 inch loaf pan.
- Combine ground flaxseed and water in a large mixing bowl and let it thicken for 5 minutes.
- Add mashed banana, melted coconut oil, sugar, vanilla extract, and grated zucchini to the bowl and stir to combine.
- Mix in the whole wheat pastry flour, cocoa powder, cinnamon, baking soda, and salt until just combined, being careful not to over-mix.
- Fold in the chocolate chips and pour the batter into the prepared loaf pan.
- Bake for 1 hour and 5 minutes or until a toothpick comes out clean.
- Cool for at least 20 minutes on a wire rack before slicing.
