Ingredients

  • 1 ¼ cups shredded zucchini
  • 1 ½ cups light spelt flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon fine sea salt
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground cardamom
  • ¼ teaspoon ground nutmeg
  • ¾ cup coconut palm sugar
  • ¾ cup unsweetened apple sauce
  • cup neutral-tasting oil
  • 1 ½ teaspoons vanilla extract
  • ½ cup walnut halves, chopped
  • ½ cup dairy-free chocolate chunks or chips

Instructions

  1. Preheat the oven to 350°F and prepare a loaf pan.
  2. Squeeze excess moisture from the shredded zucchini using a kitchen towel.
  3. In a large bowl, mix the dry ingredients: flour, baking powder, baking soda, salt, cinnamon, cardamom, and nutmeg.
  4. In a separate bowl, combine the wet ingredients: sugar, apple sauce, oil, and vanilla.
  5. Mix the wet ingredients into the dry ingredients until just combined.
  6. Fold in the zucchini, walnuts, and chocolate until evenly distributed.
  7. Transfer the batter to the prepared loaf pan and smooth the top.
  8. Bake for 60-70 minutes, or until a toothpick comes out clean.
  9. Cool in the pan before slicing.
