Ingredients

  • 1 cup cane sugar
  • ½ cup oil
  • 2 tsp vanilla extract
  • 2 ¼ cups all-purpose flour
  • 2 tsp baking powder
  • ¾ tsp sea salt
  • 1 tsp cinnamon
  • ¼ tsp ground nutmeg
  • ¼ tsp ground allspice
  • ½ cup applesauce
  • 1 cup walnuts, chopped and toasted
  • 1 cup grated zucchini

Instructions

  1. Preheat the oven to 350°F (180°C) and prepare a 9x5 loaf pan with oil spray.
  2. In a mixing bowl, combine sugar, oil, and vanilla extract, whisking for 2-3 minutes until incorporated.
  3. In a separate bowl, mix flour, baking powder, sea salt, cinnamon, nutmeg, and allspice, then add to the wet ingredients and mix until just combined.
  4. Incorporate applesauce, grated zucchini, and walnuts into the batter, allowing it to rest for 10 minutes.
  5. Pour the batter into the prepared loaf pan and smooth the top.
  6. Bake for 60 minutes, or until a toothpick comes out with a few crumbs.
  7. Let the bread cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
