Instructions
- Preheat the oven to 350°F (180°C) and prepare a 9x5 loaf pan with oil spray.
- In a mixing bowl, combine sugar, oil, and vanilla extract, whisking for 2-3 minutes until incorporated.
- In a separate bowl, mix flour, baking powder, sea salt, cinnamon, nutmeg, and allspice, then add to the wet ingredients and mix until just combined.
- Incorporate applesauce, grated zucchini, and walnuts into the batter, allowing it to rest for 10 minutes.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 60 minutes, or until a toothpick comes out with a few crumbs.
- Let the bread cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
