Ingredients

  • 1 cup grated zucchini
  • cups all-purpose flour
  • 1 teaspoon baking soda
  • ¼ teaspoon baking powder
  • teaspoons ground cinnamon
  • ½ teaspoon nutmeg
  • ¼ teaspoon allspice (optional)
  • teaspoon table salt
  • ½ cup organic light brown sugar
  • ½ cup organic white sugar
  • ½ cup canola or vegetable oil
  • ½ cup non-dairy milk
  • 1 tablespoon apple cider vinegar or white vinegar
  • ½ teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F.
  2. Mix together all dry ingredients in a small bowl.
  3. In another bowl, combine all wet ingredients.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined.
  5. Fold the grated zucchini into the batter.
  6. Grease an 8" x 4" loaf pan and pour in the batter.
  7. Bake for 50-60 minutes until a toothpick comes out clean.
  8. Let the bread rest for 10 minutes before transferring to a cooling rack.
