Vegan Zucchini Bread

Instructions
- Preheat the oven to 350°F.
- Mix together all dry ingredients in a small bowl.
- In another bowl, combine all wet ingredients.
- Pour the wet ingredients into the dry ingredients and mix until just combined.
- Fold the grated zucchini into the batter.
- Grease an 8" x 4" loaf pan and pour in the batter.
- Bake for 50-60 minutes until a toothpick comes out clean.
- Let the bread rest for 10 minutes before transferring to a cooling rack.
