Ingredients

Wet Ingredients

  • cup coconut oil
  • ½ cup applesauce
  • 2 teaspoons apple cider vinegar
  • ½ cup plant-based milk

Dry Ingredients

  • 2 cups all-purpose flour
  • ¾ cup cane sugar
  • ¼ cup brown sugar
  • ¼ teaspoon salt
  • 2 teaspoons baking powder
  • ¼ teaspoon baking soda
  • 2 teaspoons cinnamon
  • ¼ teaspoon nutmeg

Add-Ins

  • 1 cup zucchini
  • ½ cup walnuts

Instructions

  1. Preheat the oven to 350°F and grease a loaf pan or line it with parchment paper.
  2. In a medium bowl, whisk together the coconut oil, applesauce, apple cider vinegar, and plant-based milk.
  3. In another bowl, whisk together the flour, cane sugar, brown sugar, salt, baking powder, baking soda, cinnamon, and nutmeg.
  4. Combine the wet and dry ingredients, mixing until fully combined.
  5. Gently fold in the grated zucchini and walnuts if using.
  6. Pour the batter into the prepared loaf pan and top with additional walnuts if desired.
  7. Bake for 45 to 50 minutes, checking for doneness with a toothpick.
  8. Let the bread cool in the pan before slicing.
