Ingredients

The batter

  • 10 ounces Gluten Free Baking Flour Mix
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon sea salt
  • 2 pieces flax eggs or egg replacer
  • 1 cup coconut sugar
  • ½ cup coconut oil
  • ½ piece vanilla bean or 1 teaspoon vanilla extract
  • ½ cup vegan coconut yogurt or plain yogurt
  • ¾ cup mashed bananas

Optional toppings

  • as desired none GF certified oats
  • as desired none chopped pecans
  • as desired none chocolate chips or nuts

Instructions

  1. Preheat the oven to 350°F and prepare a 9x5 banana bread pan.
  2. In a bowl, sift together the gluten-free flour mix, baking powder, baking soda, and sea salt.
  3. In a mixer, combine the flax eggs, coconut sugar, and coconut oil, mixing for about 2 minutes.
  4. Add the vanilla and mix in the yogurt and mashed bananas, mixing for another 2 minutes.
  5. Gradually add the dry ingredients, mixing until just combined.
  6. Fold in any optional chocolate chips or nuts if desired.
  7. Pour the batter into the prepared pan and smooth the top.
  8. Sprinkle oats and pecans on top if using.
  9. Bake for 60 minutes, checking for doneness with a toothpick.
  10. Let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
