Instructions
- Preheat the oven to 350°F and prepare a 9x5 banana bread pan.
- In a bowl, sift together the gluten-free flour mix, baking powder, baking soda, and sea salt.
- In a mixer, combine the flax eggs, coconut sugar, and coconut oil, mixing for about 2 minutes.
- Add the vanilla and mix in the yogurt and mashed bananas, mixing for another 2 minutes.
- Gradually add the dry ingredients, mixing until just combined.
- Fold in any optional chocolate chips or nuts if desired.
- Pour the batter into the prepared pan and smooth the top.
- Sprinkle oats and pecans on top if using.
- Bake for 60 minutes, checking for doneness with a toothpick.
- Let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
