Ingredients

The batter

  • 10 ounces Gluten Free Flour Mix
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • teaspoons xanthan gum
  • ½ teaspoon sea salt
  • 2 large eggs
  • 1 cup coconut sugar
  • ½ cup coconut oil
  • ½ bean vanilla bean
  • ½ cup greek yogurt
  • ¾ cup mashed bananas
  • ½ cup chocolate chips
  • ½ cup chopped walnuts

Topping

  • as needed GF certified oats for topping

Instructions

  1. Preheat the oven to 350°F and prepare a 9 x 5 banana bread pan.
  2. Sift the gluten free flour mix, baking powder, baking soda, xanthan gum, and sea salt in a medium bowl.
  3. In a mixer, combine the eggs, coconut sugar, and coconut oil for about 2 minutes.
  4. Scrape the vanilla bean into the mixture, then add the greek yogurt and mashed bananas, mixing for 2 more minutes.
  5. Gradually add the dry ingredients, mixing until combined.
  6. Fold in the chocolate chips and chopped walnuts until evenly distributed.
  7. Transfer the batter to the prepared pan and smooth the top, sprinkling oats on top.
  8. Bake for 55-60 minutes until a toothpick comes out with a few crumbs.
  9. Cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
  10. Slice as desired and enjoy.
