Instructions
- Preheat the oven to 350°F and prepare a 9 x 5 banana bread pan.
- Sift the gluten free flour mix, baking powder, baking soda, xanthan gum, and sea salt in a medium bowl.
- In a mixer, combine the eggs, coconut sugar, and coconut oil for about 2 minutes.
- Scrape the vanilla bean into the mixture, then add the greek yogurt and mashed bananas, mixing for 2 more minutes.
- Gradually add the dry ingredients, mixing until combined.
- Fold in the chocolate chips and chopped walnuts until evenly distributed.
- Transfer the batter to the prepared pan and smooth the top, sprinkling oats on top.
- Bake for 55-60 minutes until a toothpick comes out with a few crumbs.
- Cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
- Slice as desired and enjoy.
