Ingredients

  • 2 pieces mashed bananas
  • 4 pieces beaten eggs
  • ½ cup honey
  • 3 tablespoons liquified coconut oil or ghee
  • ½ teaspoon vanilla liquid stevia
  • ½ teaspoon sea salt
  • 1 teaspoon cinnamon
  • ¼ cup tapioca flour
  • ½ cup coconut flour, sifted
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ cup chopped walnuts

Instructions

  1. Preheat the oven to 350 degrees.
  2. In a large bowl, combine the mashed bananas and beaten eggs.
  3. Mix in the honey, liquified coconut oil or ghee, vanilla liquid stevia, sea salt, and cinnamon.
  4. In a separate bowl, combine the tapioca flour, coconut flour, baking soda, and baking powder.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until well combined.
  6. Fold in the chopped walnuts.
  7. Pour the batter into a greased loaf pan.
  8. Bake for 50 to 60 minutes, or until a toothpick inserted in the center comes out clean.
  9. Let it cool before slicing.
