Ingredients

  • 2 cups gluten-free flour baking blend
  • 1 ½ teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon fine salt
  • 6 tablespoons melted butter
  • ½ cup coconut sugar or brown sugar
  • 2 large eggs
  • 1 ½ teaspoons pure vanilla extract
  • 4 medium spotted ripe bananas, mashed
  • ¾ cup chocolate chips

Instructions

  1. Preheat the oven to 350°F and prepare a loaf pan.
  2. Combine the gluten-free flour, baking powder, baking soda, and salt in a large bowl.
  3. In a separate bowl, cream together the melted butter, coconut sugar, eggs, and vanilla until smooth.
  4. Mix the dry ingredients into the wet ingredients, then fold in the mashed bananas and chocolate chips.
  5. Pour the batter into the prepared loaf pan and sprinkle additional chocolate chips on top if desired.
  6. Bake for 45-55 minutes, or until a knife inserted in the center comes out clean.
  7. Allow to cool before slicing and serving.
