Ingredients

  • cups gluten-free flour

  • 3 mashed ripe bananas
  • 2 eggs
  • cup coconut milk
  • cup melted coconut oil
  • cup maple syrup
  • ¾ cup chocolate chips

Instructions

  1. Preheat the oven to 350 degrees.
  2. Sift the flour, cocoa powder, baking soda, and salt into a medium bowl and set aside.
  3. Mash the bananas and mix with eggs, coconut milk, coconut oil, and maple syrup in a large bowl.
  4. Combine the wet and dry ingredients, then stir in the chocolate chips.
  5. Transfer the batter to a loaf pan or mini loaf pans, filling them ¾ full.
  6. Bake for about 50 minutes for a full-sized loaf or 40 minutes for mini loaves, until a toothpick comes out clean.
