Ingredients

  • 3 pieces bananas very ripe
  • ¼ cup unsalted butter melted and cooled
  • ¼ cup vegetable oil
  • 1 large egg room temperature
  • 2 teaspoons vanilla extract
  • ¾ cup light brown sugar packed
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup all-purpose flour
  • ½ cup unsweetened cocoa powder
  • 1 cup semi-sweet chocolate chips or your favorite chocolate chips
  • ½ cup pecans chopped (or walnuts) – optional

Instructions

  1. Preheat the oven to 350°F and grease a 9 x 5-inch loaf pan.
  2. In a large bowl, mash the very ripe bananas until mushy.
  3. Add melted butter and vegetable oil to the mashed bananas and mix well.
  4. Incorporate brown sugar, egg, and vanilla into the mixture until smooth.
  5. In another bowl, mix the flour, baking powder, baking soda, salt, and cocoa powder together.
  6. Combine the dry ingredients with the wet ingredients, mixing just enough to blend without overmixing.
  7. Fold in the chocolate chips and pecans, stirring gently.
  8. Pour the batter into the prepared loaf pan and bake for 50-55 minutes, or until a toothpick comes out mostly clean.
  9. Cool in the pan for 10-15 minutes before transferring to a wire rack to cool completely.
