Chocolate Banana Bread

Ingredients

  • 2 cups all-purpose flour
  • ½ cup cocoa powder
  • 1 tsp baking powder
  • tsp baking soda
  • ½ tsp salt
  • 1 cup mashed banana
  • cup butter or coconut oil
  • 1 cup brown or coconut sugar
  • 2 egg replacements or 2 regular eggs
  • 1 tsp vanilla
  • cup almond milk
  • ¾ cup chocolate chips

Instructions

  1. Preheat the oven to 350°F and prepare a bread tin with parchment paper and cooking oil spray.
  2. In a large bowl, mix the flour, cocoa, baking soda, baking powder, and salt.
  3. In another bowl, combine the mashed banana with melted oil or butter, brown sugar, egg replacement (or eggs), vanilla, and almond milk, whisking until mixed.
  4. Combine the wet and dry mixtures, stirring with a wooden spoon, and fold in ½ cup of chocolate chips.
  5. Transfer the batter to the prepared tin, sprinkle the remaining chocolate chips on top, and bake for 50-55 minutes.
  6. Let it cool in the tin for 5 minutes, then transfer to a wire rack to cool completely before serving.
