Healthy Chocolate Banana Bread

Ingredients

Dry Ingredients

  • 1 cup white whole wheat flour
  • ½ cup light brown sugar or coconut sugar
  • ¾ cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • teaspoon salt
  • ½ cup chocolate chips

Wet Ingredients

  • 2 large eggs
  • 3 medium ripe bananas, mashed (~1.25 cups)
  • ½ cup unsweetened almond milk
  • 2 teaspoons vanilla extract
  • ¼ cup melted coconut oil

Instructions

  1. Preheat the oven to 350ºF and spray a standard-size bread pan with nonstick cooking spray.
  2. Mix dry ingredients together in a medium-sized bowl and set aside.
  3. In a separate bowl, mash the bananas and mix in the wet ingredients except for the coconut oil.
  4. Slowly add the dry ingredients to the wet mixture and mix to combine, then add the melted coconut oil and mix again.
  5. Pour the batter into the greased bread pan, sprinkle chocolate chips on top, and bake for 45-50 minutes or until fully cooked.
  6. Let the banana bread cool for 10 minutes before removing it from the pan to finish cooling.
