Healthy Banana Bread with Coconut Oil

Ingredients

Dry Ingredients

  • cups white whole wheat flour
  • ½ cup brown sugar
  • 1 teaspoon baking soda
  • teaspoon salt
  • 1 teaspoon ground cinnamon
  • ½ cup chocolate chips

Wet Ingredients

  • 2 large eggs
  • 3 medium bananas
  • ½-¾ cup plain, unsweetened almond milk
  • 1 teaspoon vanilla extract
  • ¼ cup melted coconut oil

Instructions

  1. Preheat the oven to 350ºF and spray a bread pan with nonstick cooking spray.
  2. Roast 3 bananas (with peels) on a cookie sheet for 10-15 minutes until dark brown.
  3. Mash the roasted bananas in a bowl and mix in the wet ingredients.
  4. In a separate bowl, combine the dry ingredients, excluding the chocolate chips.
  5. Slowly add the dry ingredients to the wet mixture and fold in the chocolate chips.
  6. Pour the batter into the greased bread pan, sprinkle extra chocolate chips on top, and bake for 45-50 minutes.
  7. Let the banana bread cool for 5 minutes in the pan before transferring it to finish cooling.
