Healthy Banana Bread with Coconut Oil

Instructions
- Preheat the oven to 350ºF and spray a bread pan with nonstick cooking spray.
- Roast 3 bananas (with peels) on a cookie sheet for 10-15 minutes until dark brown.
- Mash the roasted bananas in a bowl and mix in the wet ingredients.
- In a separate bowl, combine the dry ingredients, excluding the chocolate chips.
- Slowly add the dry ingredients to the wet mixture and fold in the chocolate chips.
- Pour the batter into the greased bread pan, sprinkle extra chocolate chips on top, and bake for 45-50 minutes.
- Let the banana bread cool for 5 minutes in the pan before transferring it to finish cooling.
