Ingredients

The batter

  • 2 pieces very ripe bananas, mashed
  • ½ cup coconut sugar, or regular sugar
  • ¾ cup almond milk, or any milk
  • cup extra-virgin olive oil, plus more for brushing
  • 1 teaspoon vanilla extract
  • 1 teaspoon apple cider vinegar
  • cups whole wheat pastry flour
  • ½ cup almond flour
  • 2 teaspoons baking powder
  • ¼ teaspoon baking soda
  • ½ teaspoon sea salt
  • ½ teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • ½ cup chopped walnuts

The topping

  • 2 tablespoons chopped walnuts
  • tablespoons whole rolled oats

Instructions

  1. Preheat the oven to 350°F and brush a 9x5-inch loaf pan with olive oil.
  2. In a large bowl, whisk together the mashed bananas, sugar, almond milk, olive oil, vanilla, and apple cider vinegar until combined.
  3. In a separate medium bowl, mix the whole wheat pastry flour, almond flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  4. Add the dry ingredients to the wet ingredients and stir until just combined, then fold in the walnuts.
  5. Pour the batter into the prepared loaf pan and sprinkle the top with chopped walnuts and oats.
  6. Bake for 42 to 50 minutes, or until a toothpick inserted in the middle comes out clean.
