Ingredients

Wet Ingredients

  • 1 and 1/4 cups mashed bananas
  • 6 Tablespoons unsweetened applesauce
  • 2 large eggs
  • 1/4 cup honey
  • 1/4 cup packed light or dark brown sugar
  • 1/3 cup milk
  • 2 teaspoons pure vanilla extract

Dry Ingredients

  • 1 and 3/4 cups whole wheat flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon salt

Optional Ingredients

  • 2/3 cup chopped walnuts

Instructions

  1. Preheat the oven to 350°F (177°C) and prepare a loaf pan with non-stick spray.
  2. Mash the bananas and mix with applesauce and eggs using an electric mixer.
  3. Add honey, brown sugar, milk, and vanilla extract, and mix until combined.
  4. In a separate bowl, whisk together whole wheat flour, baking soda, cinnamon, and salt.
  5. Combine the dry ingredients with the wet ingredients and mix until just combined.
  6. Fold in the walnuts if using.
  7. Pour the batter into the prepared loaf pan and bake for 60-65 minutes.
  8. Cover with foil halfway through if the top browns too quickly.
  9. Check for doneness with a toothpick; it should come out clean.
  10. Let the bread cool in the pan before slicing and serving.
