Healthy Banana Bread

Ingredients

  • 2 cups white whole wheat flour
  • ½ cup coconut sugar (or brown sugar)
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • 3 ripe bananas ripe bananas
  • 2 large eggs
  • ¼ cup maple syrup
  • ½ cup Greek yogurt
  • 1 teaspoon vanilla extract
  • ¼ cup unsweetened almond milk
  • ¼ cup coconut oil

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare an 8x4 bread pan.
  2. In a large mixing bowl, mash the ripe bananas until smooth.
  3. Add the eggs, maple syrup, Greek yogurt, vanilla extract, and almond milk to the mashed bananas and mix well.
  4. In a separate bowl, combine the flour, coconut sugar, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Finally, stir in the melted coconut oil until fully incorporated.
  7. Pour the batter into the prepared bread pan and smooth the top.
  8. Bake for about 60 minutes, or until a toothpick inserted in the center comes out clean.
  9. Let the bread cool in the pan for 10-15 minutes before transferring to a wire rack.
