Instructions
- Preheat the oven to 350°F (175°C) and prepare an 8x4 bread pan.
- In a large mixing bowl, mash the ripe bananas until smooth.
- Add the eggs, maple syrup, Greek yogurt, vanilla extract, and almond milk to the mashed bananas and mix well.
- In a separate bowl, combine the flour, coconut sugar, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Finally, stir in the melted coconut oil until fully incorporated.
- Pour the batter into the prepared bread pan and smooth the top.
- Bake for about 60 minutes, or until a toothpick inserted in the center comes out clean.
- Let the bread cool in the pan for 10-15 minutes before transferring to a wire rack.
