Chocolate Banana Bread

Ingredients

  • ½ cup coconut oil, melted and cooled to room temperature
  • 1 cup all-purpose flour
  • cup white whole wheat flour
  • cup unsweetened cocoa powder
  • 1 ½ teaspoons baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon espresso powder (optional)
  • ½ teaspoon ground cinnamon
  • ½ teaspoon kosher salt
  • 1 cup mashed ripe banana (about 3 medium-large bananas)
  • 2 large eggs
  • cup non-fat plain Greek yogurt
  • ½ cup honey
  • 2 teaspoons pure vanilla extract
  • ½ cup dark chocolate chips

Instructions

  1. Melt the coconut oil and let it cool to room temperature.
  2. Preheat the oven to 325°F and line a 9x5-inch loaf pan with parchment paper.
  3. In a large bowl, whisk together the all-purpose flour, white whole wheat flour, cocoa powder, baking soda, baking powder, espresso powder, cinnamon, and salt.
  4. In another bowl, mash the bananas and whisk in the eggs, Greek yogurt, honey, vanilla, and oil.
  5. Make a well in the center of the dry ingredients and pour the wet ingredients into it, stirring gently to combine.
  6. Fold in the chocolate chips and transfer the batter to the prepared pan.
  7. Sprinkle additional chocolate chips on top if desired.
  8. Bake for 50 to 60 minutes, or until a knife inserted in the center comes out clean.
  9. Let the loaf cool in the pan for 5 minutes before transferring it to a wire rack to cool completely.
