Ingredients

  • 1 ½ cups mashed ripe bananas
  • 2 large eggs
  • ½ cup melted coconut oil (or melted butter)
  • 1 tsp vanilla extract
  • 1 ½ cups all-purpose flour (or gluten-free 1 to 1 flour)
  • a pinch sea salt
  • ½ tsp baking soda
  • 1 tsp baking powder
  • ¾ cup maple sugar (or light brown sugar)
  • 1 cup sugar free chocolate chips

Instructions

  1. Preheat the oven to 350°F and line a loaf pan with parchment paper.
  2. In a mixing bowl, combine the mashed bananas, eggs, melted coconut oil, and vanilla extract, stirring to combine.
  3. Add the flour, sea salt, baking soda, baking powder, and maple sugar to the mixture and stir until combined.
  4. Fold in the chocolate chips, reserving some for the top.
  5. Transfer the batter to the loaf pan, smoothing it into an even layer and dotting with extra chocolate chips.
  6. Bake for 45 to 50 minutes, or until a toothpick comes out clean.
  7. Remove from the oven and let the bread cool completely before slicing.
