Ingredients

Dry Ingredients

  • 6 cups unbleached all-purpose flour
  • 1 tablespoon kosher salt
  • 1 tablespoon sugar
  • teaspoons instant yeast
  • ¾ cup red quinoa
  • ¼ cup + 2 tablespoons flax seed

Wet Ingredients

  • 3 cups lukewarm water
  • cup olive oil
  • 2 to 3 tablespoons softened butter

Instructions

  1. Whisk together the flour, salt, sugar, and instant yeast in a large bowl.
  2. Add quinoa and flax seeds, tossing to coat.
  3. Add the lukewarm water and olive oil, mixing until a sticky dough forms.
  4. Cover the bowl with a damp cloth and let it rise in a warm place for 1½ to 2 hours until doubled in size.
  5. Preheat the oven to 375ºF and grease two loaf pans with softened butter.
  6. Deflate the dough and divide it into two equal halves, transferring to the prepared pans.
  7. Let the dough rise for an additional 20 to 30 minutes until it crowns the rim of the pans.
  8. Bake for 40 to 45 minutes until golden, then cool before slicing.
