Ingredients

  • ¾ cup brown sugar
  • 1 tablespoon kosher salt
  • cups old-fashioned oats
  • 3 cups boiling water
  • 2 tablespoons butter
  • teaspoons active dry or instant yeast
  • ¼ cup warm water
  • 3 cups all-purpose flour
  • 3 cups whole wheat flour

Instructions

  1. Combine brown sugar, salt, and oats in a large mixing bowl, then add boiling water and butter; let cool to lukewarm.
  2. In a small bowl, dissolve yeast in warm water and let it stand for about 5 minutes, then add to the oat mixture.
  3. Gradually mix in the flours until combined.
  4. Transfer the dough to a greased bowl, cover, and let rise in a warm place until doubled, about 2 hours.
  5. Grease two loaf pans and punch down the dough, dividing it into two portions for the pans.
  6. Let the dough rise again until it reaches the rim of the pans.
  7. Preheat the oven to 425°F and bake the loaves for 10 minutes, then reduce the temperature to 350°F and bake for an additional 40-45 minutes.
  8. Cool the loaves on wire racks after baking.
