No-Knead Maple Oat Bread

Instructions
- Combine oats, boiling water, maple syrup, and salt in a large bowl and let stand for 10 minutes.
- Add the remaining room-temperature water and stir to combine.
- Sprinkle yeast over the mixture and stir again.
- Add the flours and mix until a sticky dough forms, kneading briefly if necessary.
- Cover the bowl and let the dough rise in a warm place for 2 to 3 hours until doubled in size.
- Preheat the oven to 375°F and grease a loaf pan with butter, coating it with oats.
- Once the dough has risen, drizzle olive oil over it and coat the surface.
- Shape the dough into a loaf and place it in the prepared pan, topping it with reserved oats.
- Let the dough rise for another 45 minutes to 1 hour until it domes above the pan.
- Bake for 45 minutes until the top is browned, then cool for at least 30 minutes before slicing.
