No-Knead Maple Oat Bread

Ingredients

The dough

  • 1 cup rolled oats
  • ½ cup rolled oats for coating
  • 1 cup boiling water
  • ¼ cup maple syrup
  • 1.5 teaspoons kosher salt
  • ¾ cup room-temperature water
  • 1.5 teaspoons instant yeast
  • cups unbleached bread flour or all-purpose flour
  • 1 cup stone-milled flour or whole-wheat flour

For greasing

  • 1 tablespoon olive oil
  • as needed none softened unsalted butter

Instructions

  1. Combine oats, boiling water, maple syrup, and salt in a large bowl and let stand for 10 minutes.
  2. Add the remaining room-temperature water and stir to combine.
  3. Sprinkle yeast over the mixture and stir again.
  4. Add the flours and mix until a sticky dough forms, kneading briefly if necessary.
  5. Cover the bowl and let the dough rise in a warm place for 2 to 3 hours until doubled in size.
  6. Preheat the oven to 375°F and grease a loaf pan with butter, coating it with oats.
  7. Once the dough has risen, drizzle olive oil over it and coat the surface.
  8. Shape the dough into a loaf and place it in the prepared pan, topping it with reserved oats.
  9. Let the dough rise for another 45 minutes to 1 hour until it domes above the pan.
  10. Bake for 45 minutes until the top is browned, then cool for at least 30 minutes before slicing.
