Instructions
- Preheat the oven to 350°F and grease a loaf pan.
- Blend the rolled oats in a high-powered blender until they become a fine flour.
- Add xanthan gum, baking powder, baking soda, and salt to the blender and mix briefly.
- In a large bowl, combine eggs, maple syrup, coconut milk, and applesauce.
- Add the dry ingredients from the blender to the wet ingredients and stir until combined.
- Transfer the batter to the prepared loaf pan and bake for 45 to 50 minutes until browned and the internal temperature reaches 190°F.
- Cool the loaf on a wire rack before slicing.
