Ingredients

  • 4 cups rolled oats
  • 2 tsp xanthan gum
  • tsp baking powder
  • tsp baking soda
  • ¾ tsp salt
  • 3 large eggs
  • ¼ cup pure maple syrup
  • ½ cup coconut milk (or other non-dairy milk)
  • cup unsweetened applesauce

Instructions

  1. Preheat the oven to 350°F and grease a loaf pan.
  2. Blend the rolled oats in a high-powered blender until they become a fine flour.
  3. Add xanthan gum, baking powder, baking soda, and salt to the blender and mix briefly.
  4. In a large bowl, combine eggs, maple syrup, coconut milk, and applesauce.
  5. Add the dry ingredients from the blender to the wet ingredients and stir until combined.
  6. Transfer the batter to the prepared loaf pan and bake for 45 to 50 minutes until browned and the internal temperature reaches 190°F.
  7. Cool the loaf on a wire rack before slicing.
