Gluten Free Apple Bread

Ingredients

  • 1 ¼ cup gluten free flour blend
  • ¾ teaspoon baking powder
  • ¼ teaspoon baking soda
  • ¾ cup applesauce
  • 1 teaspoon ground cinnamon
  • ¾ teaspoon sea salt
  • ¼ cup coconut oil
  • 1 cup sugar of choice
  • ¼ cup sour cream
  • 2 large eggs
  • 2 tablespoons milk
  • ½ cup walnuts, toasted

Instructions

  1. 1. Preheat the oven to 350°F and grease a loaf pan.
  2. 2. In a bowl, whisk together the gluten free flour blend, baking powder, and baking soda.
  3. 3. In a medium saucepan, combine applesauce, cinnamon, and sea salt. Cook over medium heat for 3 to 4 minutes while stirring constantly, then stir in the coconut oil until melted.
  4. 4. Remove from heat and whisk in the sugar and sour cream until well combined. Allow to cool for at least 5 minutes.
  5. 5. In a separate bowl, whisk together the eggs and milk. Add this mixture to the applesauce mixture and stir until well combined.
  6. 6. Fold in the flour mixture and whisk for one minute.
  7. 7. Pour the batter into the prepared pan and top with walnuts.
  8. 8. Bake for 40 to 45 minutes, or until a toothpick inserted in the center comes out clean. Cool on a wire rack for 20 minutes before removing from the pan.
