Ingredients

The bread

  • ½ cup walnut halves
  • 2 cups tart apples, cored, peeled, and diced
  • 1 ½ cups whole wheat white flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon kosher salt
  • ½ cup unsweetened applesauce
  • 2 tablespoons canola oil
  • 2 tablespoons milk
  • ½ cup granulated sugar
  • 1 large egg
  • 1 teaspoon pure vanilla extract

For Topping (Optional)

  • 1 tablespoon sparkling sugar or turbinado sugar
  • ¼ teaspoon ground cinnamon

Instructions

  1. Preheat the oven to 350°F and prepare a loaf pan.
  2. Toast the walnuts on a baking sheet until fragrant.
  3. In a bowl, whisk together the dry ingredients.
  4. In another bowl, mix the wet ingredients until smooth.
  5. Combine the wet and dry ingredients until just mixed.
  6. Fold in the apples and walnuts gently.
  7. Pour the batter into the loaf pan and sprinkle with cinnamon sugar.
  8. Bake for 25 minutes, then tent with foil and bake for an additional 20 minutes.
  9. Cool in the pan for 10 minutes, then transfer to a wire rack.
