Ingredients

The apples

  • cups peeled & chopped apples (1/2 inch chunks; about 2 medium apples)
  • cup packed light or dark brown sugar
  • teaspoons ground cinnamon

The batter

  • cups all-purpose flour (spooned & leveled)
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup unsalted butter, softened to room temperature
  • ¾ cup granulated sugar
  • 2 large eggs, at room temperature
  • cup unsweetened applesauce, at room temperature
  • 1 teaspoon pure vanilla extract
  • ½ cup whole milk, at room temperature

Instructions

  1. Preheat the oven to 350°F (177°C) and prepare a 9×5-inch loaf pan.
  2. Mix the apples, brown sugar, and cinnamon in a bowl and set aside.
  3. In another bowl, whisk together the flour, cinnamon, nutmeg, baking powder, baking soda, and salt.
  4. In a mixer, beat the butter and granulated sugar until creamy, then add the eggs, applesauce, and vanilla, mixing until combined.
  5. Gradually add the dry ingredients to the wet mixture, alternating with the milk, until just combined.
  6. Spread half of the batter in the loaf pan, layer the apple mixture on top, and then add the remaining batter.
  7. Swirl the batter gently with a knife.
  8. Bake for 60-75 minutes, covering with foil after 30 minutes to prevent over-browning.
  9. Cool in the pan before slicing and serving.
