Ingredients

The batter

  • 1 large egg
  • 1 cup unsweetened applesauce
  • cup sugar
  • 1 teaspoon vanilla extract
  • 4 tablespoons light butter, melted

The dry ingredients

  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • ½ teaspoon salt
  • ¼ teaspoon nutmeg
  • ¼ teaspoon ground cloves

The fruit

  • 1 ½ cups peeled and chopped apple

Instructions

  1. Preheat the oven to 350°F and prepare a 9” x 5” loaf pan with cooking spray.
  2. In a large bowl, mix the egg, applesauce, sugar, and vanilla extract until combined.
  3. Stir in the melted butter.
  4. In another bowl, whisk together the flour, baking soda, baking powder, cinnamon, salt, nutmeg, and cloves.
  5. Combine the dry ingredients with the wet ingredients until just mixed.
  6. Fold in the chopped apples.
  7. Pour the batter into the prepared loaf pan and bake for 45-50 minutes, or until a toothpick comes out clean.
  8. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
