Gluten-Free Apple Bread

Instructions
- Preheat the oven to 350°F and line a loaf pan with parchment paper.
- In a small bowl, combine the diced apples, sugar, cinnamon, and optional whiskey until the apples are coated.
- In a large bowl, whisk together the oil and granulated sugar until smooth, then add the eggs and beat until combined. Mix in the applesauce and vanilla extract.
- In another bowl, whisk together the dry ingredients: flour, baking powder, baking soda, cinnamon, ginger, nutmeg, and salt.
- Gradually add the wet mixture to the dry ingredients and mix until just combined. Stir in the cinnamon apples, reserving 2 tablespoons.
- Spoon the batter into the prepared loaf pan and add the reserved apples and optional nuts on top.
- Bake for 35 minutes, then cover with aluminum foil and continue baking for an additional 20-25 minutes until a toothpick comes out clean.
- Cool briefly in the pan before transferring to a wire rack to cool completely.
