Ingredients

The cake

  • cups blanched almond flour
  • 3 tbsp tapioca flour
  • 2 tsp cinnamon
  • ½ tsp cardamom
  • ½ tsp paleo baking powder
  • ¼ tsp sea salt
  • ¼ cup coconut oil, melted
  • ¼ cup coconut butter, softened
  • ½ cup maple syrup
  • 1 tsp vanilla
  • 1 medium apple, thinly sliced

The topping

  • cup pecans, chopped
  • 2 tbsp ghee, melted
  • 2 tbsp coconut sugar
  • 1 tsp cinnamon
  • a pinch sea salt

Optional topping

  • Salted caramel sauce

Instructions

  1. Preheat the oven to 350°F and grease a 9x9" baking dish.
  2. Chop the apples and set aside.
  3. In a large mixing bowl, whisk together the almond flour, tapioca flour, cinnamon, cardamom, salt, and baking powder.
  4. Mix in the remaining cake ingredients (except the apples) until combined.
  5. Fold in the sliced apples and pour the mixture into the greased dish, spreading it out evenly.
  6. Combine the topping ingredients in a bowl and sprinkle them over the cake mixture.
  7. Bake for 50-55 minutes, or until a toothpick comes out clean.
  8. Let the cake cool completely before slicing and serving. Drizzle with caramel sauce if desired.
