Ingredients

The cake

  • 2 tbsp unsalted butter, melted
  • 2 cups super fine blanched almond flour
  • ¼ cup ground flaxseed
  • 2 tsp cinnamon
  • 1 tsp baking soda
  • ½ tsp fine sea salt
  • 6 tbsp pure maple syrup
  • cup unsweetened applesauce
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup sweet crisp apple, diced small

Cinnamon sugar topping

  • ¼ cup coconut sugar
  • cup almond flour
  • ¼ cup walnuts, finely chopped
  • 1 ½ tsp cinnamon
  • 1 tbsp unsalted butter, melted

Instructions

  1. Preheat the oven to 350°F and grease an 8x8 inch baking dish.
  2. Melt the butter and set aside, then chop the apple into small pieces.
  3. In a mixing bowl, whisk together almond flour, flaxseed, cinnamon, baking soda, and salt.
  4. Add maple syrup, applesauce, eggs, vanilla, and 2 tablespoons of melted butter to the dry ingredients and mix well, then fold in the diced apple.
  5. Pour the batter into the prepared baking dish.
  6. In a small bowl, mix together coconut sugar, almond flour, walnuts, cinnamon, and 1 tablespoon of melted butter for the topping, then sprinkle it over the batter.
  7. Bake for 25 minutes, then cool before slicing into 9 pieces.
