Ingredients

The cake

  • 2 ½ cups all-purpose flour
  • 2 teaspoons baking powder
  • ¾ teaspoon baking soda
  • ½ teaspoon salt
  • 2 teaspoons ground cinnamon
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon ground ginger
  • ¼ teaspoon allspice
  • 1 cup vegetable oil
  • 1 cup granulated sugar
  • ½ cup packed light or dark brown sugar
  • 1 cup unsweetened applesauce
  • 4 large eggs
  • 1 teaspoon pure vanilla extract
  • 2 tablespoons orange juice
  • 3 cups peeled chopped apples

Optional: Brown Sugar Glaze

  • ¼ cup unsalted butter
  • 1 cup packed light or dark brown sugar
  • ½ cup heavy cream
  • 1 pinch salt
  • ½ cup confectioner’s sugar

Instructions

  1. Preheat the oven to 350°F (177°C) and grease a 9×13-inch baking pan.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, ginger, and allspice.
  3. In a medium bowl, whisk together the oil, granulated sugar, brown sugar, applesauce, eggs, vanilla extract, and orange juice.
  4. Combine the wet ingredients with the dry ingredients and fold in the chopped apples.
  5. Spread the batter evenly into the prepared pan and bake for 45–50 minutes, tenting with foil if necessary.
  6. Let the cake cool for at least 30 minutes before serving.
  7. Optionally, top with confectioners' sugar or prepare the brown sugar glaze by melting butter, brown sugar, heavy cream, and salt, then whisk in confectioners' sugar.
  8. Serve the cake warm or at room temperature.
