Ingredients

The cake

  • 2 ¼ cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • ¾ tsp salt
  • 2 tsp ground cinnamon
  • 1 tsp ground ginger
  • ½ tsp ground nutmeg
  • ¼ tsp ground allspice
  • ¾ cup granulated sugar
  • ½ cup brown sugar
  • 2 large eggs
  • 2 cups unsweetened applesauce
  • ¾ cup vegetable oil or canola oil
  • 1 tsp vanilla extract

The cream cheese frosting

  • 8 oz. cream cheese
  • 6 Tbsp unsalted butter
  • 3 cups powdered sugar
  • 1 tsp vanilla extract

Instructions

  1. Preheat the oven to 350°F and prepare a 13 by 9-inch baking dish with non-stick spray.
  2. In a large bowl, whisk together the dry ingredients for 30 seconds and make a well in the center.
  3. In a separate bowl, beat together the granulated sugar, brown sugar, and eggs until pale and fluffy.
  4. Mix in the applesauce, vegetable oil, and vanilla extract until combined.
  5. Pour the wet mixture into the well of the dry ingredients and gently fold until just combined.
  6. Pour the batter into the prepared baking dish and level it out.
  7. Bake for 30 to 40 minutes until a toothpick comes out clean.
  8. Cool the cake on a wire rack.
  9. For the frosting, blend the cream cheese, butter, powdered sugar, and vanilla until fluffy.
  10. Spread the frosting over the cooled cake and slice to serve.
