Ingredients

The cake

  • 1 cup applesauce
  • ½ cup sugar
  • cup avocado oil
  • ¼ cup almond milk
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon apple cider vinegar
  • ¾ cup all-purpose flour
  • ¾ cup whole wheat flour
  • ½ cup almond flour
  • 2 teaspoons apple pie spice
  • 2 teaspoons baking powder
  • ½ teaspoon sea salt
  • ¼ teaspoon baking soda
  • ½ cup chopped walnuts

Optional frosting

  • 1 serving cream cheese frosting

Instructions

  1. Preheat the oven to 350°F and grease an 8x8-inch baking pan, lining it with parchment paper.
  2. In a large bowl, whisk together the applesauce, sugar, avocado oil, almond milk, eggs, vanilla extract, and apple cider vinegar.
  3. In a separate bowl, whisk together the all-purpose flour, whole wheat flour, almond flour, apple pie spice, baking powder, sea salt, and baking soda.
  4. Combine the dry ingredients with the wet ingredients and stir until just mixed, then fold in the chopped walnuts.
  5. Pour the batter into the prepared baking pan and smooth the top.
  6. Bake for 32 to 39 minutes, or until a toothpick inserted comes out clean.
  7. Allow the cake to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
  8. Top with cream cheese frosting if desired, and enjoy.
