Apple Cake

Instructions
- Preheat the oven to 375ºF and prepare a 9” round cake pan with butter and flour, adding parchment to the bottom.
- Melt the butter in a frying pan, reserving 6 tablespoons for later.
- Add apple chunks to the melted butter and cook until tender, about 7-10 minutes.
- In a small bowl, mix together flour, salt, and baking powder.
- In a large bowl, beat the whole eggs and egg yolks, then add the reserved butter, sugar, vanilla, lemon juice, and lemon zest.
- Stir in the flour mixture and the sautéed apples (discard any leftover butter).
- Pour the batter into the prepared pan and smooth the top.
- Bake for 30-35 minutes until golden brown, then cool in the pan for 5 minutes.
- Invert the cake onto a plate, then onto a serving dish.
- Serve warm with a sprinkle of confectioners sugar, whipped cream, or ice cream.
