Ingredients

  • 4 ounces unsalted butter
  • 3 large Gala apples, cut into chunks
  • cup all-purpose flour
  • ½ teaspoon baking powder
  • ½ teaspoon sea salt
  • 2 large whole eggs
  • 1 large egg yolk
  • 1 teaspoon vanilla extract
  • 1 cup granulated sugar
  • 1 tablespoon lemon juice
  • ½ teaspoon grated lemon zest

Instructions

  1. Preheat the oven to 375ºF and prepare a 9” round cake pan with butter and flour, adding parchment to the bottom.
  2. Melt the butter in a frying pan, reserving 6 tablespoons for later.
  3. Add apple chunks to the melted butter and cook until tender, about 7-10 minutes.
  4. In a small bowl, mix together flour, salt, and baking powder.
  5. In a large bowl, beat the whole eggs and egg yolks, then add the reserved butter, sugar, vanilla, lemon juice, and lemon zest.
  6. Stir in the flour mixture and the sautéed apples (discard any leftover butter).
  7. Pour the batter into the prepared pan and smooth the top.
  8. Bake for 30-35 minutes until golden brown, then cool in the pan for 5 minutes.
  9. Invert the cake onto a plate, then onto a serving dish.
  10. Serve warm with a sprinkle of confectioners sugar, whipped cream, or ice cream.
