Instructions
- 1. Preheat the oven to 350°F and grease a 9x13 inch pan.
- 2. In a small bowl, mix together the flour, baking soda, salt, cinnamon, ginger, and nutmeg.
- 3. In a large mixing bowl, combine the eggs, melted coconut oil or butter, and maple syrup.
- 4. Add the dry ingredients to the wet ingredients and mix until combined.
- 5. Stir in the diced apples and nuts if using.
- 6. Transfer the batter to the prepared baking dish and bake for 35 to 40 minutes.
- 7. Check if the cake is done by inserting a toothpick in the center; it should come out clean.
- 8. For an extra treat, brush maple syrup on top and sprinkle with cinnamon while cooling.
