Ingredients

The cake

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda

  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon ground allspice
  • 2 cups granulated sugar
  • ½ cup canola or vegetable oil
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 4 cups chopped peeled apples

The frosting

  • 8 oz. cream cheese at room temperature
  • 4 tablespoons unsalted butter at room temperature
  • 1 teaspoon vanilla extract
  • 2 cups powdered sugar

Instructions

  1. Preheat the oven to 350°F and prepare a 9x13 pan.
  2. In a medium bowl, whisk together the flour, baking soda, cinnamon, salt, nutmeg, and allspice.
  3. In a large bowl, whisk together the sugar, oil, eggs, and vanilla extract, then mix in the flour mixture until combined.
  4. Stir in the chopped apples until the batter is moistened.
  5. Pour the batter into the prepared pan and bake for 45 minutes or until golden brown.
  6. Allow the cake to cool completely on a wire rack.
  7. For the frosting, beat the cream cheese until smooth, then add the butter and mix until combined.
  8. Mix in the vanilla and powdered sugar until smooth.
  9. Frost the cooled cake and serve.
