Ingredients

The Cake

  • 1 cup all-purpose flour
  • 1 cup white whole wheat flour
  • ½ tsp baking soda
  • 1 tsp cinnamon
  • ½ tsp ground cloves
  • ½ tsp allspice
  • ½ tsp nutmeg
  • ¼ tsp salt
  • 3 large eggs
  • cup maple syrup
  • 1 cup melted coconut oil
  • 1 tsp vanilla extract
  • 1 cup shredded apple

The Crumble

  • ½ cup white whole wheat flour
  • ½ cup quick oats
  • 3 tbsp melted coconut oil
  • ¼ cup maple syrup
  • ½ tsp cinnamon

Instructions

  1. 1. Preheat the oven to 350°F and grease a 9x9 baking dish.
  2. 2. In a medium bowl, mix together the flours, baking soda, spices, and salt. Set aside.
  3. 3. In a large bowl, whisk the eggs, then mix in the maple syrup, coconut oil, and vanilla.
  4. 4. Gradually add the dry ingredients to the wet ingredients and mix until combined. Stir in the shredded apple.
  5. 5. Pour the cake batter into the baking dish and spread it evenly.
  6. 6. In a small bowl, mix together the crumble ingredients and sprinkle them on top of the cake batter.
  7. 7. Bake for 32-35 minutes, or until a toothpick inserted into the center comes out clean.
