Instructions
- Preheat the oven to 350°F (177°C) and prepare a 9×13-inch baking pan.
- For the crumb topping, mix brown sugar, granulated sugar, cinnamon, and salt in a bowl, then stir in melted butter and mix in flour until crumbles form.
- For the cake, whisk flour, baking soda, baking powder, and salt together and set aside.
- Beat the butter and granulated sugar until smooth, then add eggs, sour cream, and vanilla, mixing until combined.
- Mix in the dry ingredients until smooth, then toss chopped apples with cinnamon.
- Spread the batter in the pan, top with apples, and then add crumb topping, pressing it down.
- Bake for 45-55 minutes until a toothpick comes out clean, covering with foil if browning too quickly.
- Cool for at least 30-45 minutes before slicing and serving, adding icing if desired.
