  • ¾ cup unsalted butter, softened to room temperature
  • cups granulated sugar
  • 3 large eggs, at room temperature
  • 1 cup full-fat sour cream, at room temperature
  • 2 teaspoons pure vanilla extract
  • 2 cups peeled chopped apples (about 2 medium apples)
  • ¼ teaspoon ground cinnamon
  • to taste maple icing, vanilla icing, or caramel icing

Instructions

  1. Preheat the oven to 350°F (177°C) and prepare a 9×13-inch baking pan.
  2. For the crumb topping, mix brown sugar, granulated sugar, cinnamon, and salt in a bowl, then stir in melted butter and mix in flour until crumbles form.
  3. For the cake, whisk flour, baking soda, baking powder, and salt together and set aside.
  4. Beat the butter and granulated sugar until smooth, then add eggs, sour cream, and vanilla, mixing until combined.
  5. Mix in the dry ingredients until smooth, then toss chopped apples with cinnamon.
  6. Spread the batter in the pan, top with apples, and then add crumb topping, pressing it down.
  7. Bake for 45-55 minutes until a toothpick comes out clean, covering with foil if browning too quickly.
  8. Cool for at least 30-45 minutes before slicing and serving, adding icing if desired.
