The cake

  • cup homemade caramel sauce
  • 1 cup white whole wheat flour
  • 1 teaspoon ground cinnamon
  • ½ teaspoon kosher salt
  • ½ teaspoon baking powder
  • ¼ teaspoon baking soda
  • ¼ teaspoon nutmeg
  • ¼ teaspoon allspice
  • ¾ cup brown sugar
  • ¼ cup unsalted butter
  • ¼ cup virgin coconut oil
  • 1 large egg
  • 1 tablespoon milk or cream
  • ½ cup roughly chopped toasted pecans
  • cup whole pecan halves
  • 1 pound firm apples

For serving

  • optional vanilla ice cream

Instructions

  1. Preheat the oven to 350°F and prepare an 8x8-inch baking pan.
  2. Whisk together the dry ingredients in a medium bowl and set aside.
  3. In a large mixing bowl, beat the brown sugar, butter, coconut oil, egg, and milk until light and creamy.
  4. Fold in the diced apples and chopped pecans, then add the dry ingredients and mix until combined.
  5. Transfer the batter to the prepared baking pan, drizzle with caramel, and sprinkle with whole pecans.
  6. Bake until golden at the edges and the sides begin to pull away from the pan.
  7. Let cool, cut into squares, and serve with additional caramel and vanilla ice cream if desired.
