Ingredients

The cake

  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp Diamond Crystal kosher salt or ½ tsp. Morton kosher salt
  • ½ tsp ground cinnamon (optional)
  • ½ cup unsalted butter, divided
  • 1 cup light brown sugar, divided
  • ½ cup granulated sugar
  • 1 tsp vanilla extract
  • 2 large eggs
  • 3 large apples, preferably Granny Smith, peeled and grated

The glaze

  • ¼ cup heavy cream
  • Flaky sea salt

Instructions

  1. Preheat the oven to 350°F and line an 8x8" baking dish with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon (if using).
  3. Melt ⅓ cup of butter in a skillet, then combine with light brown sugar, granulated sugar, and vanilla in a large bowl. Whisk in the eggs.
  4. Add the dry ingredients to the wet mixture and mix until mostly combined. Fold in the grated apples.
  5. Pour the batter into the prepared baking dish and smooth the top. Bake for 30–35 minutes until a tester comes out clean.
  6. Let the cake cool in the pan, then invert onto a platter.
  7. For the glaze, melt the remaining butter in the skillet, then add heavy cream, salt, and light brown sugar. Bring to a boil and cook until thickened.
  8. Pour the glaze over the cake and sprinkle with flaky sea salt. Let cool for at least 5 minutes before cutting.
