Caramel Apple Snacking Cake

apples, preferably Granny Smith, peeled and grated
The glaze

heavy cream

Flaky sea salt
Instructions
- Preheat the oven to 350°F and line an 8x8" baking dish with parchment paper.
- In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon (if using).
- Melt ⅓ cup of butter in a skillet, then combine with light brown sugar, granulated sugar, and vanilla in a large bowl. Whisk in the eggs.
- Add the dry ingredients to the wet mixture and mix until mostly combined. Fold in the grated apples.
- Pour the batter into the prepared baking dish and smooth the top. Bake for 30–35 minutes until a tester comes out clean.
- Let the cake cool in the pan, then invert onto a platter.
- For the glaze, melt the remaining butter in the skillet, then add heavy cream, salt, and light brown sugar. Bring to a boil and cook until thickened.
- Pour the glaze over the cake and sprinkle with flaky sea salt. Let cool for at least 5 minutes before cutting.
