Instructions
- Preheat the oven to 350°F and grease a 7x5-inch baking dish.
- Mix diced apples, sugar, lemon juice, and cinnamon in a small bowl and set aside.
- Combine softened butter, brown sugar, flour, and cinnamon in another small bowl to form a thick paste and set aside.
- In a small bowl, whisk together flour, baking powder, and salt.
- In a medium bowl, beat softened butter and sugar until light and fluffy, then add egg and vanilla, mixing well.
- Add sour cream and one tablespoon of milk, beating until smooth.
- Mix in half of the flour mixture, then the remaining milk, followed by the rest of the flour mixture until just combined.
- Transfer the batter to the prepared baking dish and smooth the top.
- Combine the apple mixture with the cinnamon swirl mixture, then drop spoonfuls over the batter and swirl them in without completely mixing.
- Bake for 27 to 35 minutes until a toothpick comes out with a few moist crumbs.
- While warm, whisk together glaze ingredients and pour over the cake, allowing it to set for 15 to 20 minutes before serving.
