Ingredients

The cake

  • 2 ½ cups whole wheat flour
  • ¾ cup vegetable oil
  • ¾ cup sugar
  • ¾ cup brown sugar
  • ½ teaspoon nutmeg
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 2 teaspoons cinnamon
  • ¾ teaspoon salt
  • 1 cup milk
  • 1 large egg
  • 1 large granny smith apple, peeled and finely diced
  • 1 tablespoon whole wheat flour

The topping

  • 1 cup pecans, finely chopped
  • 1 teaspoon cinnamon

Instructions

  1. Preheat the oven to 350°F and grease a 13"×9" glass pan.
  2. In a stand mixer, combine flour, brown sugar, white sugar, vegetable oil, salt, 1 teaspoon of cinnamon, and nutmeg until mixed.
  3. Set aside 1 ½ cups of the mixture for the topping.
  4. In the small bowl with the reserved mixture, add chopped pecans and cinnamon, and mix until combined.
  5. In the stand mixer, add milk, egg, baking soda, and baking powder, mixing until smooth.
  6. In a separate bowl, toss the diced apples with 1 tablespoon of flour.
  7. Fold the apples into the batter and pour it into the prepared pan.
  8. Spread the pecan crumble topping evenly over the batter.
  9. Bake for 30-35 minutes or until a toothpick comes out clean.
