Apple Coffee Cake

Ingredients

  • 2 medium tart apples (such as Granny Smith)
  • 2 cups unbleached all-purpose flour
  • teaspoons baking powder
  • 2 teaspoons ground cinnamon
  • ¼ teaspoon salt
  • ½ cup butter (1 stick, at room temperature)
  • 1 cup sugar
  • ½ cup milk or plain soy milk
  • 2 large eggs
  • teaspoons vanilla extract
  • cup apple jelly

Instructions

  1. Preheat the oven to 450°F and lightly grease and flour an 8-inch springform pan.
  2. Peel, quarter, and core the apples, then cut each quarter into ½-inch-thick wedges.
  3. In a small bowl, mix the flour, baking powder, cinnamon, and salt.
  4. In a large bowl, beat the butter until smooth, then add sugar and beat until fluffy.
  5. Beat in the milk, eggs, and vanilla, then add the flour mixture and beat until smooth.
  6. Spread the batter in the prepared pan and arrange the apple wedges on top, brushing with half of the apple jelly.
  7. Bake at 450°F for 15 minutes, then reduce the temperature to 350°F and bake for an additional 50 to 60 minutes until a cake tester comes out clean.
  8. Cool the cake on a wire rack for 15 minutes before removing the sides of the pan.
  9. Brush the top of the cake with the remaining apple jelly and cool completely before serving.
