Ingredients

The cake

  • 1 ⅔ cup almond flour
  • 3 – 4 Tablespoons tapioca flour or oat flour
  • ½ cup coconut sugar or raw sugar
  • ½ teaspoon baking soda
  • Pinch kosher salt
  • 1 teaspoon baking powder
  • 2 eggs
  • 1 teaspoon vanilla extract
  • ¼ cup non-dairy milk
  • ¼ cup applesauce or plain yogurt
  • 1 Tablespoon unpasteurized apple cider vinegar
  • 1 teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • cup chopped apple plus extra apple for topping

The topping

  • optional apple slices or ½ cup chopped apple
  • 2 – 3 Tablespoons melted clarified butter or naturally refined coconut oil
  • 4 Tablespoons raw sugar for topping
  • 4 Tablespoons almond flour or gluten free flour

Instructions

  1. Preheat the oven to 350°F and line a baking pan with parchment paper.
  2. In a large bowl, sift together the almond flour, tapioca flour, coconut sugar, baking soda, salt, and baking powder.
  3. In another bowl, whisk together the eggs, vanilla extract, and non-dairy milk, then mix this into the dry ingredients until smooth.
  4. Add the applesauce or yogurt, apple cider vinegar, cinnamon, and nutmeg, and mix well.
  5. Fold in the chopped apple, adjusting the milk if the batter is too dry.
  6. Pour the batter into the lined baking dish and top with optional apple slices.
  7. In a small bowl, mix melted butter, raw sugar, and almond flour to create a crumble topping, then sprinkle it over the batter.
  8. Bake for 28 to 35 minutes, covering with foil after 20 minutes to prevent over-browning.
  9. Let the cake cool for 20 minutes in the fridge before serving.
