Instructions
- Preheat the oven to 350°F (160°C) and grease a 10-inch circular baking pan.
- Sift together flour and baking powder in a medium bowl and set aside.
- Cream together butter and sugar in a large bowl until fluffy and pale yellow.
- Separate the egg whites and yolks; add yolks to the butter mixture one at a time, mixing well.
- Add yogurt and mix until blended, then fold in the flour mixture gradually.
- Add vanilla extract, cinnamon, and nutmeg, and mix well.
- Beat egg whites until soft peaks form and gently fold into the batter.
- Fold in diced apples until fully combined, then pour the batter into the prepared pan.
- In another bowl, mix ground cinnamon, melted butter, pecans, and caster sugar for the topping.
- Spread the topping evenly over the batter.
- Bake for 50-55 minutes or until a skewer inserted in the center comes out clean.
- Let the cake rest in the pan for 20 minutes before removing and cooling completely.
